Shrimp Soup
Ingredients:
1 med. onion, sliced
1 clove garlic, sliced
1 med. carrot, sliced
5 c. water
1 stalk celery with leaves, sliced
1 qt. (2 lb.) raw shrimp in shell
1 tsp. salt

Directions:
Bring water to a boil with all ingredients except shrimp.
Add shrimp and cook until tender; drain, reserving liquid. Peel shrimp; place in blender with 2 c. of the liquid. Blend until shrimp are finely chopped; add to remaining liquid in saucepan. Taste for Seasoning. Serve hot with thin slice of lemon for garnish.
