Shrimp Toast
Ingredients:
Oil
1 lb. uncooked shrimp, shelled and deveined
1/4 c. whole watere chestnuts
2 green onions (white part only)
1 1/2 tsp. dry white wine
1 tsp. vegetable oil
1/2 tsp. salt
1/2 tsp. freshly ground pepper
12 slices sandwich bread, crusts trimmed

1/2 tsp. salt
1/2 tsp. freshly ground pepper

Directions:
Pour oil into deep fryer or skillet to depth of 2 inches and heat to 350m degrees. Mix shrimp, water chestnuts and onion in processor or grinder until very fine. Add wine, vegetable oil, salt and pepper and mix well.
Spread mixture evenly over bread slices. Fry bread in batches until golden brown, about 5 minutes; drain on paper towels. cut each slice into 4 strips. Serve immediately.
