Special Oatmeal Cookies
Ingredients:
1 1/2 cups flour
1 tsp. soda
1 tsp. salt
2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 cup shortening
1 cup sugar
1 cup firmly packed brown sugar
2 eggs
1 tsp. lemon extract
3 cups quick cooking oats, uncooked
1 cup chopped pecans
1 1/2 cups flour

3 cups quick cooking oats, uncooked
1 cup chopped pecans
Directions:
Combine first 5 ingredients, set aside. Cream shortening and sugar until light and fluffy; beat in eggs and lemon extract. Add flour mixture, mixing well. Stir in oats
and pecans. Shape dough into 1 inch balls and place on lightly greased cookie sheets. Bake at 350 for 10-12 minutes.
