White Chocolate Chip Cookies with Macadamia Nuts
Ingredients:
1/2 c. unsalted butter, cut in pieces
1/3 c. sugar
1/3 c. brown sugar
6 1/2 oz. white chocolate chips
3 oz. macadamia nuts, halved
1/2 tsp. baking soda
1/4 tsp. salt
1 egg
1 tsp. vanilla
1 c. flour
1/2 c. unsalted butter, cut in pieces
1/3 c. sugar
1/3 c. brown sugar
6 1/2 oz. white chocolate chips
3 oz. macadamia nuts, halved
1/2 tsp. baking soda
1/4 tsp. salt
1 egg
1 tsp. vanilla
1 c. flour
Directions:
Preheat oven to 375 degrees. Lightly grease 2 cookie sheets. Use steel knife in processor to blend butter, sugars, egg and vanilla until fluffy, about 1 minute. Add flour, baking soda and salt. Mix until just combined using 2 to 3 on/off turns. Do not overprocess. Transfer to a large bowl. Stir in coarsely chopped chocolate chips and nuts. Mound dough by 1/3 cupfuls onto prepared sheets, spacing 2 inches apart. Bake until light brown around the edges, about 15 minutes. Cool on cookie sheets for 3 minutes. Transfer to rack. Cool completely.
