Swallows
Ingredients:
4 boneless veal leg or round cutlets
Lemon juice
4 bacon slices
4 cooked ham slices
4 hard-cooked eggs
3 Tbs. butter
Generous 1/2 c. white wine
Generous 1/2 c. meat stock
Generous 1/2 c. sour cream

Directions:
Pound cutlets lightly; trim meat as needed. Clip or slash edges to prevent curling during cooking. Sprinkle each cutlet lightly with lemon juice and salt. Place 1 bacon slice and 1 ham slice on each veal cutlet. Place 1 shelled hard-cooked egg in center of each. Roll up meat layers, enclosing egg. Secure with small skewers, cocktail picks or thread. Melt butter in a small skillet; add meat rolls. Saute until light golden brown. turning frequently. Add wine and stock. Cover and simmer 40 minutes or until meat is tender. Add water occasionally to keep from boiling dry. Srtir in nsour cream; season with salt and pepper. Remove skewers, etc. beforew serving. Serve with fresh vegetables or salad and rice, noodles or creamed potatoes.
