Sweet Potato Pancakes with Sour cream
Ingredients:
1 egg
1 Tbs. bread crumbs
1/4 tsp. salt
Black pepper to taste
1 large white potato, peeled and grated (rinse in cold water)
1 large sweet potato, peeled and grated (rinse in cold water)
2 Tbs. butter
1 Tbs. vegetable oil
1 c. sour cream (at room temperature)
Fresh nutmeg
1 egg

1/4 tsp. salt

Directions:
Combine egg, bread crumbs, salt and pepper. Drain potatoes and pat dry. Add potato to egg mixture. Heat butter and oil on griddle, the spoon about 1/4 cup of batter onto griddle about an inch apart. Cook for about 5 minutes on each side until crisp and browned. Serve hot, garnished with sour cream and nutmeg.
