Turkey Hash
Ingredients:
1 Tbs. oil, divided
1 lg. onion, chopped
2 c. cubed potatoes, cooked, preferably new
2-2 1/2 c. turkey, cubed and cooked
1/4 c. minced fresh parsley
2/3 c. turkey broth or leftover gravy
salt, if desired
Freshly ground black pepper
1 1/2 Tbs. bread crumbs
Ketchup to accompany

Directions:
In nonstick skillet heat 2 tsp. oil. Add onion and saute over medium-low until onion begins to brown. Stir in potatoes, turkey and parsley. Season to taste and preheat oven to 350. Brush 9" round baking dish with remaining oil and spoon in turkey mixture and sprinkle with bread crumbs. Bake 30-40 minutes until top is browned. Serve with ketchup.
