Two-Bean Fritters
Ingredients:
1 c. green beans cut in 1/2" pieces
1 c. wax beans cut in 1/2" pieces
1 1/2 c. flour
1 Tbs. baking powder
1 beaten egg
1 c. milk
Fat for deep frying

Directions:
Cook beans until crisp-tender, 20 to 30 minutes. Drain well. stir together flour, baking powder, and 3/4 tsp. salt. Combine egg, milk, and cooked beans. Add to dry ingredients, mixing just till moistened. Drop batter by Tbs. into deep hot fat (375). Fry, several at a time, till golden brown, 3 to 4 minutes. Drain on paper towels. Makes about 24 fritters.
