Zucchini Boats
Ingredients:
1 lg. zucchini (about 8")
1 Tbs. chopped mushrooms
1 Tbs. chopped onion
2 Tbs. chopped green pepper
1/2 tomato, diced
1/2 clove garlic, finely minced
1 tsp. oregano
2 Tsp. freshly grated Parmesan cheese

Directions:
Slice zucchini in half lengthwise. Scoop out center, leaving 1/4 inch-thick "boat". Dice the zucchini from the center. Toss the mushrooms, onion, pepper,tomato, garlic, oregano and diced zucchini. Fill boats with the mixture. Place boats in a microwave-safe baking dish. Add 2 Tbs. water to the bottom. Sprinkle with Parmesan cheese. Cover dish with plastic wrap. Cook on high for 10 to 12 minutes or until boats are tender when pierced with a fork. Remove and let stand for 5 minutes to finish cooking.
