Apple-Pecan Cake
Ingredients:
3 eggs
2 c. sugar
1 c. vegetable oil
2 tsp. vanilla
2 3/4 c. flour
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
4 c. peeled, chopped apples
1 c. chopped pecans

Directions:
Beat eggs at medium speed until thick and pale. Gradually add sugar, beating until blended. Add oil and vanilla; beat at low speed until blended. Combine flour and next 3 ingredients, add to beaten mixture, stirring until blended. Stir in apples and pecans. Por batter into a greased and floured 10" tube pan. Bake at 350 for 1 hour and 25 minutes or until tests done. Cool cake in pan on a wire rack for 5 minutes; remove from pan, and cool completely on wire rack.
