Apple Walnut Cake
Ingredients:
1 2/3 c. sugar
2 eggs
1/2 c. vegetable oil
2 tsp. vanilla
2 c. flour
2 tsp. baking soda
1 1/2 tsp. ground cinnamon
1 tsp. salt
1/2 tsp. nutmeg
4 c. chopped unpeeled apples
1 c. chopped walnuts
FROSTING:
2 pkgs.(3 oz. each) cream cheese, softened
3 Tbs. butter, softened
1 tsp. vanilla
1 1/2 c. powdered sugar
1 2/3 c. sugar

1/2 c. vegetable oil
2 tsp. vanilla
2 c. flour
2 tsp. baking soda
1 1/2 tsp. ground cinnamon
1 tsp. salt
1/2 tsp. nutmeg
4 c. chopped unpeeled apples
1 c. chopped walnuts
FROSTING:
2 pkgs.(3 oz. each) cream cheese, softened
3 Tbs. butter, softened
1 tsp. vanilla
1 1/2 c. powdered sugar
Directions:
In a mixing bowl, beat sugar and eggs. Add oil and vanilla; mix well. Combine flour, baking soda, cinnamon, salt and nutmeg; gradually add to sugar mixture, mixing well. Stir in apples and walnuts. Pour into greased and floured 13x9x2" pan. Bake at 350 for 50 to 55 minutes or until cake tests done. Cool on a wire rack. For frosting, beat cream cheese, butter and vanilla in a mixing bowl. Gradually add sugar until the frosting has reached desired spreading consistency. Frost cooled cake.
