Apricot Cookies
Ingredients:
1 c. butter, softened
1/2 c. sugar
1/2 c. brown sugar
1 egg
1 tsp. vanilla
2 1/2 c. flour
1/4 c. orange juice
1 tsp. baking soda
1/2 tsp. salt
1 (6 oz.) pkg. chopped dried apricots
1/2 c. chopped cashews
1 c. butter, softened
1/2 c. sugar
1/2 c. brown sugar
1 egg
1 tsp. vanilla
2 1/2 c. flour
1/4 c. orange juice
1 tsp. baking soda
1/2 tsp. salt
1 (6 oz.) pkg. chopped dried apricots
1/2 c. chopped cashews
Directions:
Heat oven to 350 degrees. In large mixing bowl, combine butter, sugars, egg and vanilla. Beat until light and fluffy. Add flour, juice, baking soda and salt. Beat at low speed until soft dough forms. Stir in apricots andd cashews.
Drop by heaping teaspoonfuls 2" apart onto ungreased cookie sheets. Bake for 9-10 minutes, or until edges are golden brown.
Makes 4 1/2 dozen cookies.
