Apricot Nut Drop Cookies
Ingredients:
3/4 c. butter-flavored shortening
1 1/4 c. brown sugar
1 egg
2 Tbs. milk
1 tsp. vanilla
1 3/4 c. flour
1 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
1 c. chopped dried apricots
1 c. chopped pecans
3/4 c. butter-flavored shortening
1 1/4 c. brown sugar
1 egg
2 Tbs. milk
1 tsp. vanilla
1 3/4 c. flour
1 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
1 c. chopped dried apricots
1 c. chopped pecans
Directions:
In a mixing bowl, cream shortening and brown sugar. Beat in egg, milk and vanilla.Combine dry ingredients; gradually add to cream mixture. Stir in apricots and pecans. Drop by rounded tablespoosfuls 3" apart onto ungreased cooking sheets. Bake at 375 for 10 to 13 min. or until golden brown. Cool for 2 min.; remove to wire racks. Yield: 4 1/2 doz.
