Barbecued Beef
Ingredients:
Salt and pepper to taste
1 5 lb. boneless beef roast
FOR SAUCE:
1 lg. onion, chopped
2 c. chili sauce
1 c. ketchup
1 tsp. Worcestershire sauce
2 c. water
2 Tbs. cornstarch
1 Tbs. chili powder
1 tsp. paprika
1/4 tsp. black pepper
1/2 c. brown sugar
1/2 tsp. ground allspice
Salt and pepper to taste
1 5 lb. boneless beef roast
FOR SAUCE:
1 lg. onion, chopped
2 c. chili sauce
1 c. ketchup
1 tsp. Worcestershire sauce
2 c. water
2 Tbs. cornstarch
1 Tbs. chili powder
1 tsp. paprika
1/4 tsp. black pepper
1/2 c. brown sugar
1/2 tsp. ground allspice
Directions:
Preheat oven to 325 degrees.
Rub salt and pepper over roast and place on rack in roasting pan. Roast 2 1/2 hours (no basting, no covering). Remove from oven and let stand 1 hour to cool or refrigerate overnight, depending on when you want to finish baking.
Mix all sauce ingredients together. Slice roast into thin slices and layer in large baking pan with sauce, ending with sauce. Cover with foil and bake at 325 for 3 hours. Meat will absorb a lot of the sauce and will be wonderfully tender. Serve on buns. Makes 12 to 15 sandwiches.
