Blackberry Cobbler
Ingredients:
1 1/2 c. flour
3 Tbs. sugar
1 1/2 tsp. baking powder
1/2 c. shortening (not butter)
2 egg yolks
1 Tbs. lemon juice
3 Tbs. orange juice

1/2 c. shortening (not butter)
2 egg yolks
1 Tbs. lemon juice
3 Tbs. orange juice
Directions:
Mix flour, sugar and baking powder together. Cut in shortening until it resembles cornmeal. Stir in egg yolks mixed with the fruit juices. Chill dough a few miutes and roll out 1/8" thick. Mix 2 quarts of blackberries (or any other berry) with 3/4 c.sugar and 1/4 c. flour and 1/2 c. butter. Taste the berries for sweetness and add more sugar if necessary. Pour into a 3 quart casserole and cover with the pastry. Sprinkle lightly with sugar and bake at 375 for 45 minutes.
