Blueberry Cobbler
Ingredients:
1/3 to 1/2 c. sugar
1 Tbs. cornstarch
3 c. blueberries
4 tsp. lemon juice
1 tsp. each grated lemon peel and cinnamon
1/8 tsp.salt
Cobbler topping
1/3 to 1/2 c. sugar
1 Tbs. cornstarch

Directions:
Combine sugar and cornstarch in saucepan; add blueberries, lemon juice, lemon peel, cinnamon and salt. Cook and stir over medium heat 4-6 minutes or until thickened. Place in 4 c. baking dish; spoon cobbler topping over fruit mixture. Bake at 375 for 15 to 20 minutes. Serve warm with ice cream or whipped cream. TOPPING: stir together 1 c. flour. 3 Tbs. sugar, 1 1/2 tsp. baking powder and 1/4 tsp. each cinnamon and salt. Combine 1 beaten egg and 1/3 c. milk; stir in dry ingredients just till moistened.
