Carrot Casserole
Ingredients:
6 large carrots
2 eggs, separated
1 small onion, diced
1 c. crumbs
2 Tbs. butter
1 c. milk
Salt and pepper to taste

Directions:
Cook carrots; drain and mash. Add all ingredients. Folding in beaten egg whites last. Put into a buttered casserole. Bake at 350 for 1 hour.
