Carrot Mushroom Stir
Ingredients:
6-8 medium carrots, thinly sliced
2 Tbs. butter
2 Tbs. olive oil
1 6 oz. jar sliced mushrooms
5 green onion with tops, thinly sliced
1 Tbs. lemon juice
1/2 tsp. salt, optional
1/4 tsp. pepper

Directions:
In a skillet over medium heat, stir fry carrots in butter and oil fot 7 minutes. Add mushrooms and onions; cook and stir for 4-6 minutes or until vegetables are tender. Stir in lemon juice , salt and pepper.
Makes 7 Servings
