Chicken and Dumplings


1 egg
2 Tbs.milk
1/2 tsp. salt
3 tsp. baking powder


Cook and debone the meat of 2 1/2 lbs. of chicken. Put this meat with the broth into a large kettle with a tight fitting lid.

Beat the dunpling ingredients with enough flour to make a good stiff dough. Drop it by spoonfuls into boiling broth. Cook the dumplings, covered, for 5-8 minutes. It is important that the lid not be removed during this time. Remove the kettle from the stove, take the lid off and serve the chicken and dumplings at once. The dumplings should be light and fluffy.
