Ingredients:

1.4 c. flour
4 c. milk
2 c. diced potatoes
1/2 c. minced onion
1/2 to 3/4 tsp. salt
1/4 to 1/2 tsp. freshly ground black pepper

Directions:
Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; stir in potatoes, onion, salt, and pepper. Cook over medium heat, stirring frequently, until mixture is thickened and potatoes are done, Makes 5 cups.
