Cranberry Chip Cookies
Ingredients:
1/2 c. sugar
1/2 c. shortening
2 eggs
1 tsp. vanilla
1 c. flour
1 c. quick-cooking oats
1 tsp. baking powder
1 c. white chocolate chips
1/2 c. dried cranberries
1/2 c. flaked coconut
1/2 c. sugar

Directions:
Heat oven to 350 degrees. In large mixing bowl, combine sugar, shortening, eggs and vanilla. Beat until light and fluffy. Add flour, oats and baking powder. Beat at low speed until soft dough forms. Stir in chips, cranberries and coconut.
Drop by heaping teaspoonfuls 2" apart onto ungreased cookie sheets. Bake for 9-11 minutes, or until set.
Makes about 3 dozen cookies.
