Cream of Mushroom Soup
Ingredients:
1 c. mushrooms
2 Tbs. chopped onion
2 Tbs. butter
2 Tbs. flour
2 c. chicken broth
1/2 c. light cream
1/2 tsp. salt
1/4 tsp. pepper

Directions:
Slice mushrooms through caps and stems. Cook with onion in butter 5 minutes. Add flour and blend. Gradually add broth. Cook and stir until slightly thickened. Cool slightly. Add cream and seasonings. Heat (but do not boil) and serve.
