Crisp Fried Onion Rings
Ingredients:
2 lg. Spanish onions
1 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. sugar
1/4 tsp. pepper
3/4 c. beer
1 lg. egg, beaten
Vegetable oil

Directions:
Cut onion into 1/2" slices, and separate into rings. Place in a bowl; add cold water to cover. Chill 1 hour. Srain on paper towels. Combine flour and next 4 ingredients; stir well. Add beer and egg, stirring with a wire whisk until smooth. Pour oil to depth of 3" into a Dutch oven; heat to 375 degrees. Dip onion rings into batter, fry, a few at a time, 3 minutes or until golden. Drain on paper towels.
