Duchess Meat Loaf
Ingredients:
1 envelope onion soup mix
1 1/2 c. water
2 lbs. ground beef
Seasoned mashed potatoes

1 1/2 c. water
2 lbs. ground beef
Seasoned mashed potatoes
Directions:
Stir soup mix into water in a 2-cup measure. Measure out 1/2 c. and blend into ground beef. Shape mixture into a thick 8" round in a large frying pan; cut into 6 wedges but leave in patty shape. Pour remaining soup mixture over; cover. Cook over medium heat 25 minutes, or until richly browned. Spoon hot mashed potatoes into a mound on top of meat; dip gravy from bottom of pan and drizzle over.
