Mincemeat
Ingredients:
This recipe makes about 5 qts..Can be frozen for future use.
2 lb. lean beef
5 lb. apples (Stehman Winesap or York Imperial)
1 lb. seeded raisins
1 1/2 tsp. cinnamon
1 Tbs. nutmeg
1 Tbs. allspice
1 Tbs. salt
2 1/2 lb. brown sugar
1 1/2 qt. spiced vinegar
Orange rind
Peach brandy or the juice of 2 lemon and 3 oranges

Directions:
Cook beef until tender.Grind meat in a food chopper ( DO NOT USE FRESH GROUND BEEF). Grind apples in food chopper. Put all ingredients in a large saucepan and bring to a boil.
When peaches are in seaon I spice peaches with equal parts of sugar, water and vinegar making sure I have at least 1 1/2 qts. of extra liquid. This I can for when I make the mincemeat. This peach flavored vinegar gives the mincemeat a special flavor.
