Eggplant Casserole
Ingredients:
6 Tbs. butter
2 c. cooked eggplant, cubed
1 Tbs. onion, chopped
1 tsp. salt
1/4 tsp. blck pepper
1 c. milk
1 c. cracker crumbs
1 c. American cheese, cubed
2 eggs, beaten

Directions:
Add butter to hot eggplant; mix until melted. Add remaining ingredients; mix well. Pour into greased casserole dish. Bake at 325 until center rises, about 30 minutes.
