Fresh Strawberry Pie
Ingredients:
1 baked 9" pie shell
1 qt. fresh strawberries
1 (3 oz.) pkg. cream cheese, softened
1 c. sugar
2 1/2 Tbs. cornstarch Whipped cream
1 baked 9" pie shell
1 qt. fresh strawberries
1 (3 oz.) pkg. cream cheese, softened
1 c. sugar
2 1/2 Tbs. cornstarch Whipped cream
Directions:
Spread cream cheese over cooled, baked pie shell. Saving enough berries to cover bottom of pie, crush the rest to a pulp and add enough water to make 1 1/2 c. liquid. Bring this juice to a boil and add mix of sugar and cornstarch. Boil until thickened and somewhat clear. Cool and pour over the berries in the pie. Chill ast least 2 hours. Top with whipped cream.
