Ham and Bean Soup
Ingredients:
2 c. white beans soaked overnight
1 hambone with meat
3 qts water
1/2 c. cooked mashed potatoes
3 onions, chopped fine
1 bunch celery stalks and tops chopped fine
1 clove garlic minced
1/4 c. finely chopped parsley
Chicken soup base to taste to enhance the flavor

Chicken soup base to taste to enhance the flavor
Directions:
Put soaked beans, ham bone and water in a soup kettle. Simmer slowly 3 hours. Add mashed potatoes when beans are half cooked and stir until thoroughly mixed. Add onions, celery, garlic and parsley. Simmer 1 hour longer. Remove ham bone, chop up all the pieces of meat and return to soup before serving.
Makes 6-8 Servings
