Hawaiian Coffee Cake
Ingredients:
1 egg, beaten
1 c. crushed pineapple
1/4 c. melted shortening
1 1/2 c. flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. coconut
1/2 c. brown sugar
2 Tbs. butter

Directions:
Combibne egg, pineapple and melted shortening.Add mixture of flour, baking powder, salt and sugar; stir only until flour is dampened. Pour into greased 8" square pan. Top with mixture of coconut, brown sugar and butter. Bake at 400 for 25 minutes.
