Lobster Newberg
Ingredients:
6 Tbs. butter
2 Tbs. flour
1 1/2 c. light cream
3 beaten egg yolks
1 c. lobster cooked
3 Tbs. dry white wine
2 tsp. lemon juice

Directions:
Melt butter; blend in flour and cream. Cook until thickens. Add egg yolks in small amounts and stir until thick. Add lobster and heat. Add wine and lemon juice. Serve over toast or rice.
