Lobster Bisque
Ingredients:
3 lobster tails, fresh or frozen
1/4 c. chopped green onions
1/4 c. margerine
1/4 c. flour
1/2 c. sherry
3 1/2 c. skim milk
3 Tbs. chopped parsley
1/2 tsp. salt
2 tsp. white pepper
1/4 tsp. hot sauce
Paprika

Directions:
Cut lobster meat into 1/2" pieces. Saute green onions in margerine. Add flour, stir until smooth. Cook 1 minute, stirring constantly. Slowly add sherry. Cook and stir until thick and bubbly. Slowly add miklk. Cook and stir with whisk until thick (do not boil). Add lobster, parsley, salt, pepper and hot sauce. Heat and sprinkle with paprika. Yields 5 cups.
