Lobster Newberg
Ingredients:
2 Tbs, chopped green onions
1/4 c. butter, melted
3 Tbs. flour
1 1/2 c. milk
Dash of red pepper
3 Tbs. dry white wine
2 (7 oz.) cans lobster, drained
Patty shells
Chopped fresh parsley

Directions:
Saute green onions in butter in a large saucepan until tender. Add flour, stirring until smooth. Cook 1 minute, stirring constantly, Gradually add milk, cook over medium heat, stirring constantly, until thickened and bubbly. Stir in red pepper, wine, and lobster. Cook 1 minute. Spoon lobster into patty shells; sprinkle with parsley.
Makes 4-6 Servings
