Maryland Fried Chicken
Ingredients:
1 egg, slightly beaten
1/4 c. milk
2/3 c. finely crushed crackers
1/2 tsp. salt
1/4 tsp. pepper
1 2 1/2 to 3 lb. broiler-fryer chicken, cut up
2 Tbs. shortening
1 c. milk
3/4 c. milk
3 Tbs. flour
1 tsp. salt
Dash pepper
3/4 c. milk

1 2 1/2 to 3 lb. broiler-fryer chicken, cut up
2 Tbs. shortening
1 c. milk
3/4 c. milk
3 Tbs. flour
1 tsp. salt
Dash pepper
3/4 c. milk
Directions:
Combine egg and 1/4 c. milk. Combine crackers, the 1/2 tsp. salt and 1/4 tsp. pepper. Dip chicken in egg mixture, then roll in cracker crumbs. In skillet brown chicken in hot shortening about 15 minutes, turning to brown evenly. add the 1 c. milk. Reduce heat; cover tightly. Simmer for 35 minutes. Uncover, cook till tender, 5 to 10 minutes more. Remove chicken to platter; keep warm.
For gravy, reserve 3 Tbs. drippings in skillet. In screw-top jar combine 3/4 c. milk, flour, the 1 tsp. salt, and dash pepper; shake till well blended. Stir into drippings in skillet. Blend in 3/4 c. milk. Cook, stirring constantly, till thickened and bubbly. Cook 2 to 3 minutes more. If necessary, thin with a little additional milk. Serve gravy over chicken.
