Southern Fried Chicken
Ingredients:
1 frying chicken, cut up
2 tsp. salt
1/4 tsp. pepper
1/2 c. flour
Vegetable oil or shortening
1 Tbs. water
1 frying chicken, cut up

Vegetable oil or shortening
1 Tbs. water
Directions:
Lay chicken in shallow baking pan and sprinkle with salt. Cover and refrigerate overnight. Next day pour off juices and pat chicken dry. Sprinkle chicken with pepper and roll in flour. Shake off excess. Melt shortening to cover 1 inch of pan. Heat until steam rises. Lay chicken pieces and adjust heat to medium low. Cook pieces 30 minutes and turn and cook other side 30 minutes. Add water, put on cover and let stand until fat stops sputtering. Lay chicken on paper towels top and bottom to drain. Serve hot or cold.
