Mashed Potato Casserole
Ingredients:
6 potatoes
1/2 c. milk
1/4 c. butter
2 eggs, beaten
2 tsp. salt
1 tsp. onion seasoning
1/8 tsp. pepper
1/4 c. onion, grated
1 1/2 c. American cheese, grated

Directions:
Cook potatoes until tender; mash. Add milk and whip. Add butter, eggs, seasonings, onion and 1 c. cheese; mix well. Pour into a buttered 1 1/2 qt. casserole. Bake at 375 for 40 minutes. Add remaining cheese; bake 10 minutes longer.
Makes 6 Servings
