Mincemeat Cake
Ingredients:
1 c. butter
2 c. sugar
5 eggs
1 c. mincemeat
1 c. applesauce
2 tsp. cinnamon
2 2/4 c. flour
1 tsp. baking soda
1 tsp. salt
1 c. sour cream

Directions:
Cream together butter and sugar. Add eggs and sour cream; mix well.Add mincemeat and applesauce. Beat again. Sift together flour soda, salt and cinnamon. Begin adding to other mixture small portions at a time. Lightly grease and flour a 9x13" baking pan. Pour batter into pan and bake at 350 for 50 to 55 min. Cool and serve from pan.
