Mincemeat Drop Cookies
Ingredients:
1/2 c. shortening
1/2 c. sugar
1 egg
1 c. prepared mincemeat
1 1/2 c. flour
1/2 tsp. baking soda
1/4 tsp. salt
1/2 c. shortening

Directions:
Cream shortening; gradually add sugar, beating at medium speed until light and fluffy. Add egg, and beat well. Add mincemeat, mixing well. Combine flour, soda, and salt; stir into creamed mixture. Drop dough by teaspoonfuls onto greased cookie sheets. Bake at 350 for 16 to 18 minutes. Cool on wire racks. Makes 4 1/2 dozen.
