Mousseline Sauce
Ingredients:
2 egg yolks
1 Tbs. flour
1 Tbs. butter
Salt and pepper
Lemon juice
1 c. heavy cream, whipped

Directions:
Beat egg yolks, flour, butter and seasoning to a heavy froth in top of a double boiler over hot , not boiling water. Just before serving add lemon juice to taste and fold in whipped cream.
