Mushroom Wild Rice
Ingredients:
1 (4 oz.) pkg. wild rice
2 c. water
1 Tbs. beef flavored bouillon granules
1/2 lb. fresh mushrooms, sliced
1/4 c. butter, melted
1 Tbs. lemon juice
2 Tbs. minced onion
1 Tbs. minced fresh parsley
1/8 tsp. garlic powder
1/2 c. coarsely chopped pecans, toasted
1 (4 oz.) pkg. wild rice
2 c. water
1 Tbs. beef flavored bouillon granules
1/2 lb. fresh mushrooms, sliced
1/4 c. butter, melted
1 Tbs. lemon juice
2 Tbs. minced onion
1 Tbs. minced fresh parsley
1/8 tsp. garlic powder
1/2 c. coarsely chopped pecans, toasted
Directions:
Wash wild rice in 3 changes of hot water; drain. Combine rice, 2 c. water, and bouillon granules in a medium saucepan; bring to a boil. Cover, reduce heat to low, simmer 30 to 45 minutes or until rice is tender and water is absorbed. Saute mushrooms in butter and lemon juice until tender. Stir mushrooms, onion, parsley, garlic powder, and pecans into rice.
Makes 4-6 Servings
