Open Face Bavarian Peach Pie
Ingredients:
4 c. fresh, canned or frozen peaches
(peeled sliced and arranged in baked pie shell)
1/4 c. minute tapioca or cornstarch
1 tsp. cinnamon
1/2 c. sugar
Dash salt
1 c. heavy cream

Directions:
Mix tapioca, cinnamon, sugar and salt. Add cream. Let set for 5 minutes. Cookover low heat stirring. Bring just to a boil. Pour over peaches. Bake at 350 for 35-40 minutes. Test for doneness. Place foil rim around crust if it becomes too brown.
Makes 6-8 Servings
