Parmesan Chicken
Ingredients:
1 onion, diced
1 c. diced celery
4 boneless, skinless chicken breasts
1 c. tomato sauce
1/4 c. red wine
1 Tbs. Italian seasoning
1 Tbs. freshly grated Parmesan cheese

Directions:
In a covered microwave-safe casserole, cook onion and celery in microwave until tender, 1 to 2 minutes on high. Remove from dish and set aside. Place chicken in casserole, cover, and cook for 5 minutes on high. Combine tomato sauce with wine and seasonings; pour over chicken and cook for 1 to 2 minutes longer. Add cooked onion and celery to the chicken. Sprinkle Parmesan cheese over top; cook an additional 1 to 2 minutes.
