Peanut Butter Cookies
Ingredients:
1/4 c. mashed banana
1/2 c. peanut butter
2 eggs
3/4 tsp. vanilla
2 Tbs. butter, softened
1 c. unbleached white flour
1/2 tsp. baking powder
1/2 tsp. nutmeg
1 c. chopped peanuts
1/4 c. mashed banana

Directions:
In a mixing bowl beat together mashed banana, peanut butter, eggs, vanilla and butter until creamy. Add flour, baking powder and nutmeg. Beat well. Stir in chopped peanuts. Drop batter by rounded teaspoonfuls onto lightly oiled cookis sheets. Press each cookie down with the back of a fork and again in the opposite direction to indent a checkered pattern into each cookie. Bake at 375 for 5 to 8 minutes or until lightly browned. Cool on wire racks. Makes 2 to 3 dozen cookies.
