Pecan Meltaways
Ingredients:
1 c. butter, softened
1/2 c. confectioners' sugar
1 tsp. vanilla extract
2 1/4 c. flour
1/4 tsp. salt
3/4 c. finely chopped pecans
Additional confectioners' sugar

Directions:
In a mixing bowl, cream butter, sugar and vanilla; mix well. Combine the flour and salt; add top creamed mixture. Stir in pecans. Chill. Roll dough into 1" balls and place on an ungreased baking sheet. Bake at 350 for 10-12 minutes. Roll in confectioners' sugar while warm. Cool on wire racks; roll in sugar again. Makes about 4 dozen.
