Pecan Sweet Potato Bake
Ingredients:
3 c. mashed sweet potatoes
2 eggs
1/2 c. sugar
1/4 c. half-and-half cream
1/4 c. butter, softened
2 tsp. vanilla extract
1/8 tsp. salt
TOPPING:
1/2 c. brown sugar
2 Tbs. flour
1/4 c. cold butter
1/2 c. chopped pecans

TOPPING:

2 Tbs. flour
1/4 c. cold butter
1/2 c. chopped pecans
Directions:
In a large mixing bowl, combine the first 7 ingredients; beat until light and fluffy. Transfer to a greased 11x7x2" baking dish. For topping, combine the brown sugar and flour in a bowl, cut in butter until crumbly. Fold in pecans. Sprinkle over sweet potato mixture. Bake, uncovered, at 350 for 30-35 minutes or until knife inserted near the center comes out clean.
Makes 6 -8 Servings
