Pineaple Coconut Squares
Ingredients:
2 Tbs. butter, melted
3 Tbs. sugar
1 egg
1 c. flour
1 tsp. baking powder
2 can (8 oz. each) unsweetened crushed pineapple, drained
TOPPING:
1 Tbs. butter, melted
1 c. sugar
2 eggs
2 c. flaked coconut
2 Tbs. butter, melted
3 Tbs. sugar

2 can (8 oz. each) unsweetened crushed pineapple, drained
TOPPING:
1 Tbs. butter, melted
1 c. sugar
2 eggs
2 c. flaked coconut
Directions:
In a mixing bowl, beat butter and sugar. Beat in egg. Combine flour and baking powder; stir into egg mixture. Press into a 9" square baking pan coated with nonstick coating spray. Spread pineapple over crust; set aside. For topping, in a mixing bowl, beat butter and sugar. Beat in eggs. Stir in coconut. Spread over pineapple. Bake at 325 for 35-40 minutes or until golden brown.
Makes 16 Servings
