Coconut Drop Cookies
Ingredients:
1 c. shortening
1 c. sugar
1 c. brown sugar
2 eggs
1 tsp. vanilla extract
2 c. flour
2 c. old-fashioned oats
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 c. flaked coconut
1 c. chopped walnuts
1 c. shortening
1 c. sugar
1 c. brown sugar
2 eggs
1 tsp. vanilla extract
2 c. flour
2 c. old-fashioned oats
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 c. flaked coconut
1 c. chopped walnuts
Directions:
In a large mixing bowl, cream the shortening and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, oats, baking powder, baking soda and salt; Gradually add to the creamed mixture and mix well. Stir in coconut and walnuts. Drop by rounded tablespoonfuls 3" apart onto greased baking sheets. Flatten slightly. Bake at 350 for 11-14 minutes or until golden brown. Cool for 2 minutes before removing to wire racks. Store in an airtight container. Makes 5 1/2 dozen.
