Pineapple Cobbler
Ingredients:
1 c. sugar
1/3 c. biscuit/baking mix
1 tsp. grated lemon peel
4 c. fresh pineapple chunks
TOPPING:
3/4 c. biscuit/baking mix
2/3 c. sugar
1 egg beaten
1/4 c. butter, melted
Vanilla ice cream, optional

Directions:
In a bowl, combine sugar, biscuit mix and lemon peel; stir in pineapple. Pour into a greased 9" square baking dish. Combine the biscuit mix, sugar and egg; sprinkle over the top. Drizzle with butter. Bake at 350 for 40-45 minutes or until browned. Serve warm or cold with ice cream if desired.
