Pineapple Fritters
Ingredients:
3 c. flour
2 Tbs. baking powder
1/2 tsp. salt
3/4 c. sugar
3 eggs, beaten
1 c. milk
1 (20 oz.) can crushed pineapple, drained
Vegetable oil
Powdered sugar

Directions:
Combine first 4 ingredients; stir well. Add eggs, milk, and pineapple; stir until smooth. Heat 3-4" oil to 375 degrees; carefully drop batter by heaping tablespoonfuls into hot oil, cooking 5-6 fritters at a time. Cook about 1 minute or until golden brown on one side; turn and cook other side about 1 minute. Drain well on paper towels; sprinkle with powdered sugar. Makes 3 dozen.
