Fruit Fritters
Ingredients:
1 c. sifted flour
1 Tbs. sugar
1 tsp. double-acting baking powder
1/4 tsp. salt
1 egg
1/2 c. milk
2 Tbs. melted shortening
1 c. drained, cut-up fruit (apples, peaches, bananas or crushed pineapple)
Shortening for deep frying

1 c. drained, cut-up fruit (apples, peaches, bananas or crushed pineapple)
Shortening for deep frying
Directions:
Sift flour, sugar, baking powder and salt together. Combine egg and milk and stir into the dry mixture. Add melted shortening and fruit to the batter. Drop by spoonfuls, a few at a time, into deep shortening heated to 365 degrees,. Fry until brown, until done in center. drain on paper towels. Sprinjkle with powdered sugar before serving, if desired. Serve with ham, meat loaf or other meat. Makes 12 medium fritters.
