Pork Steak Casserole
Ingredients:
4 thick pork steaks
3/4 c. rice
1 onion, sliced
1 No. 303 can tomatoes
4 stalks celery, sliced
Salt and pepper to taste
2 c. tomato juice

Directions:
Brown pork steaks. Leave in fry pan if it has a lid or move to casserole with lid. Place 3 Tbs. rice, 1 slice of peeled onion, 2 Tbs. tomato, 1 sliced stalk of celery and seasonings to taste on steaks in order listed. Gently pour in tomato juice; do not dislodge rice. Cover and bake 45 minutes at 350. If rice is not moist, add 1 c. hot liquid and bake 30 minutes.
